What “IQF” really means — and why buyers should care

Individually quick-frozen isn’t a marketing term. Here’s what happens on the floor, and why it changes what lands in your kitchen.

IQF — individually quick-frozen — describes seafood frozen piece by piece, fast, rather than in a solid block. The speed matters: the faster a piece freezes, the smaller the ice crystals that form inside it, and the less those crystals rupture the cell walls that hold texture and moisture.

On our floor, that means the catch is cleaned and graded the same day it lands, then frozen at the peak of freshness. Each piece separates clean — you take out exactly what you need and the rest stays frozen, with no thaw-and-refreeze damage.
